NUM BANH CHOK (FISH CURRY NOODLE SOUP)

Num Banh Chok, also known as “Khmer Noodle”, is a traditional Cambodian dish consisting of rice noodles topped with a fish-based green curry sauce and fresh vegetables. Num Banh Chok is typically enjoyed as a refreshing and flavorful dish, perfect for warm weather.

FOR THE FISH-BASED GREEN CURRY SAUCE

AMOUNT INGREDIENT(S) NOTES
500g  White fish fillets (such as tilapia or catfish) Deboned and chopped
2 stalks  Lemongrass Sliced
3 cloves  Garlic Minced
2 Shallots Chopped
2 tablespoons  Galangal or ginger Chopped
2 tablespoons Turmeric powder
4 Kaffir lime leaves
1 tablespoon  Shrimp paste
2 cups  Coconut milk
4 cups  Water
Salt and sugar to taste

FOR SERVING:

Cooked rice noodles Fresh or dried
Fresh vegetables such as bean sprouts, cucumber slices, shredded cabbage, and banana blossoms
Fresh herbs such as mint, cilantro, and Thai basil
Lime wedges
Red chili slices  Optional

Preparation & Tips

Prepare the Fish-Based Green Curry Sauce:

  1. In a blender or food processor, combine lemongrass, garlic, shallots, galangal or ginger, turmeric powder, kaffir lime leaves, shrimp paste, and a splash of coconut milk. Blend until you get a smooth paste.
  2. In a large pot, heat some vegetable oil over medium heat. Add the paste and cook for a few minutes until fragrant.
  3. Add the chopped fish fillets to the pot and cook until they start to break apart.
  4. Pour in the remaining coconut milk and water. Bring to a gentle simmer and let it cook for about 20-30 minutes, stirring occasionally.
  5. Season the sauce with salt and sugar to taste. Adjust the consistency by adding more water if needed.

 

Prepare the Noodles and Vegetables:

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. Prepare the fresh vegetables and herbs by washing and chopping them as desired.

 

Assemble the Num Banh Chok:

  1. Place a portion of cooked rice noodles in a bowl.
  2. Ladle the fish-based green curry sauce over the noodles.
  3. Arrange the fresh vegetables and herbs on top of the sauce.
  4. Serve with lime wedges and red chili slices on the side.

 

Enjoy:

  1. Mix everything together before eating, squeezing lime juice over the noodles for extra flavor if desired.
  2. Adjust the spiciness and seasoning according to your taste preferences.
