NOM BANH CHOK CHHA (CAMBODIAN STIR-FRIED NOODLES)

This popular Cambodian stir-fried noodle dish is "Nom Banh Chok Chha Kreung," which is made with stir-fried noodles and a variety of meats, vegetables, and aromatic spices.

200g  Rice noodles  Vermicelli noodles or wide rice noodles
2 tablespoons  Vegetable oil
2 cloves  Garlic  Minced
1 Onion Sliced
1 Bell pepper Thinly sliced
1 Carrot Julienned
100g  Tofu Cubed
100g  Cabbage Shredded
2 tablespoons  Soy sauce
1 tablespoon  Oyster sauce
1 tablespoon  Fish sauce Optional for extra flavor
1 teaspoon Sugar
1/2 teaspoon  Back pepper Freshly ground
2 Green onions Chopped for garnish
Lime wedges For serving

Preparation & Tips

Prepare the Rice Noodles:

  1. Cook the rice noodles according to the package instructions until they are al dente. Drain and set aside.

 

Stir-Fry the Ingredients:

  1. Heat the vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the minced garlic and sliced onion to the wok and stir-fry for 1-2 minutes until fragrant.
  3. Add the sliced bell pepper, julienned carrot, cubed tofu, and shredded cabbage to the wok. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp and the tofu is lightly browned.

 

Add the Noodles and Sauce:

  1. Add the cooked rice noodles to the wok with the stir-fried vegetables and tofu.
  2. In a small bowl, mix together the soy sauce, oyster sauce, fish sauce (if using), sugar, and black pepper. Pour the sauce over the noodles and vegetables.
  3. Toss everything together until the noodles are well coated in the sauce and heated through, about 2-3 minutes.

 

Serve:

  1. Transfer the stir-fried noodles to serving plates or bowls.
  2. Garnish with chopped green onions.
  3. Serve hot with lime wedges on the side for squeezing over the noodles.
