CHHA KROEUNG SACH KO (STIR-FRIED LEMONGRASS BEEF)

FOR THE BEEF MARINADE:

500g  Beef (sirloin or flank) Thinly sliced
3 tablespoons Lemongrass Finely minced
3 cloves  Garlic Minced
1 Shallot Minced
1 tablespoon  Fish sauce
1 tablespoon  Soy sauce
1 tablespoon Oyster sauce
1 tablespoon Sugar
1 teaspoon  Black pepper Freshly ground
2 tablespoons  Vegetable oil

FOR STIR-FRYING:

AMOUNT INGREDIENT(S) NOTES
2 tablespoons  Vegetable oil
1 Onion Thinly sliced
1 Bell pepper Thinly sliced
1 Red chili Thinly sliced (optional for heat)
Fresh Thai basil leaves or cilantro For garnish

Preparation & Tips

Marinate the Beef: In a bowl, combine the thinly sliced beef with minced lemongrass, minced garlic, minced shallot, fish sauce, soy sauce, oyster sauce, sugar, freshly ground black pepper, and vegetable oil. Mix well to ensure the beef is evenly coated. Let it marinate for at least 30 minutes, allowing the flavors to infuse.

 

Stir-Fry the Beef: Heat 2 tablespoons of vegetable oil in a wok or large skillet over high heat. Once hot, add the marinated beef in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes until browned and cooked through. Remove the beef from the pan and set aside.

 

Stir-Fry the Vegetables: In the same pan, add another tablespoon of vegetable oil if needed. Add the thinly sliced onion, bell pepper, and red chili (if using). Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

 

Combine: Return the cooked beef to the pan with the stir-fried vegetables. Toss everything together for another minute to heat through and combine flavors.

 

Garnish and Serve: Garnish the Chha Kroeung Sach Ko with fresh Thai basil leaves or cilantro. Serve hot with steamed rice.
