BAI SACH CHROUK (CAMBODIAN GRILLED PORK AND RICE)

Bai Sach Chrouk is a popular Cambodian dish featuring grilled or barbecued pork served with rice, often accompanied by pickled vegetables or a side of broth.

FOR THE PORK MARINADE:

2 tablespoons Soy sauce
2 tablespoons  Fish sauce
1 tablespoon  Oyster sauce
1 tablespoon  Sugar
1 teaspoon  Black pepper Freshly ground 
1 tablespoon  Vegetable oil

FOR THE PICKLED VEGETABLES (OPTIONAL):

1 Cucumber Thinly sliced
1 Carrot Thinly sliced or julienned
1/2 cup  White vinegar
1/4 cup  Sugar
1/2 teaspoon  Salt

Cooked jasmine rice
Lettuce leaves
Sliced cucumbers
Fresh herbs 
Lime wedges

Preparation & Tips

Marinate the Pork: In a bowl, combine the thinly sliced pork with minced garlic, soy sauce, fish sauce, oyster sauce, sugar, freshly ground black pepper, and vegetable oil. Mix well to ensure the pork is evenly coated. Let it marinate for at least 30 minutes, or ideally, marinate it overnight in the refrigerator for maximum flavor.

 

Prepare the Pickled Vegetables (optional): In a small saucepan, heat the white vinegar, sugar, and salt over medium heat until the sugar and salt are dissolved. Remove from heat and let the mixture cool slightly. Place the thinly sliced cucumber and carrot in a bowl and pour the vinegar mixture over them. Let the vegetables pickle for at least 30 minutes before serving.

 

Grill the Pork: Preheat a grill or barbecue to medium-high heat. Grill the marinated pork slices for 2-3 minutes on each side, or until cooked through and nicely caramelized. Alternatively, you can pan-fry the pork slices in a hot skillet or grill pan until cooked.

 

Assemble the Bai Sach Chrouk: Arrange cooked jasmine rice on a plate. Place the grilled pork slices on top of the rice. Serve with lettuce leaves, sliced cucumbers, fresh herbs, lime wedges, and pickled vegetables (if using) on the side.

 

Serve: Serve the Bai Sach Chrouk immediately, allowing diners to wrap the grilled pork slices in lettuce leaves along with rice, cucumbers, herbs, and a squeeze of lime juice.
